Maine Wild Blueberry Cake with Lemon Sauce

Want to treat your mom this mother's day?  Blueberries and lemon combine in this cake for a delicious treat for your taste buds.  She will love it.

Maine Wild Blueberry Cake with Lemon Sauce

Blueberry Cake
1/3 cup butter
1 cup sugar
2 cups flour
3 tsp. baking powder
pinch of salt
2 eggs
2/3 cup milk
1 cup blueberries

Cream softened butter with sugar.  In separate bowl, mix toether the flour, baking powder and salt.  Add dry ingredients to butter/sugar mixture along with the eggs and milk.  Beat on medium for 5 minutes.  Fold in blueberries. Pour into greased loaf pan and bake at 350 degrees for 40 minutes.  Recipe can be easily doubled.

Lemon Sauce
1 T. cornstarch
1/2 cup sugar
1/4 tsp. salt
1 cup water
2 T. lemon juice
1 tsp. grated lemon (optional)
1 egg yolk
1 T. butter

Mix cornstarch, sugar, and salt together.  Add water, heat to boiling and cook until clear and thickened, stirring constantly.  Add lemon juice and grated lemon.  Pour slowly over beaten egg yolk.  Cook for another minute and add butter.

Makes 1 1/4 cups.

This is a family favorite so I always make a double recipe.

Healthy Blueberry Bran Muffins

We make these blueberry muffins twice a week and our grandkids gobble them right up!  And they are healthy too!  We hope your family enjoys them as much as we do.  Here's our recipe:

1 1/2 cups flour
3 tsp. baking powder
1/2 tsp. salt
1/3 cup vegetable oil (I use 1/3 cup of unsweetened applesauce)
2 1/2 cups raisin bran flake cereal
1 1/4 cups milk
1 egg
1/2 cup sugar
1 cup fresh or frozen Maine wild blueberries

Mix bran flakes and milk together in a bowl. Let stand for 1-2 minutes until softened. Add egg and vegetable oil (or applesauce). Mix well. Stir flour, baking powder, salt and sugar together. Add dry mixture to cereal mixture and blueberries, stirring only until combined.

Portion batter evenly into 12 greased 2 1/2" muffin pan.

Bake at 400 degrees for 25 minutes. Recipe is easily doubled and muffins freeze well.
